🌱 Who agrees…delicious breakfast meal prep can be a saviour for busy {or not so busy} mornings!

What’s In Our Bowls ~
1️⃣ Maple almond coconut yoghurt {mix almond butter with maple syrup, then mix this with natural coconut yoghurt.}
2️⃣ Oil-free baked apple & blueberry crumble {recipe below}

4️⃣ Homemade raspberry chia jam {recipe below}

✖️ Oil-Free Baked Apple & Blueberry Crumble ~
– Fruit Layer: {All apples peeled, cored & roughly chopped}
2 green apples, 2 pink lady apples, 1 cup blueberries, 2 tbsp lemon juice, 2 1/2 tsp lemon rind, 2 tsp coconut sugar, 1/2 tsp vanilla extract, 1/2 tsp vanilla bean powder, 3 tsp corn flour, 4 tbsp water.
– Crumble: 1 cup oats, 1/8 cup oat flour, 1/8 cup coconut flour, 1/4 cup desiccated coconut, 1/4 cup walnuts {roughly chopped}, 1/4 cup almond butter {heaped}, 2 tbsp agave, 1/2 tsp Ceylon cinnamon, 1/2 tsp vanilla bean powder, 1/4 tsp salt.

– Preheat oven to 180°C. Place all the fruit layer ingredients in an oven-proof baking dish {about 18cm x 26cm}, mix well to ensure the fruit is fully coated by the liquid. Add all the crumble ingredients to a large bowl. Mix well. Add a few tablespoons of this to the fruit mixture & stir thoroughly. Now sprinkle the remaining topping over the top & compress slightly. Place in the oven, cook for 1 hour {or longer if the apples aren’t soft~ test with a skewer}. Keep an eye on the topping to ensure it doesn’t burn. Cover with foil if it’s starting to get too dark, then continue to cook until the apples are soft {this will depend on how big your apples pieces are}. If using for meal prep, like me, allow to cool then divide among containers.

✖️Raspberry Chia Jam ~
2 cups frozen raspberries, 1/2 cup water, 1/4 cup chia seeds, 1 tbsp maple syrup.
~ Place all ingredients in a saucepan, bring to a boil, reduce heat & simmer on low, stirring occasionally for about 20-25 mins. Will thicken up once cooled. For extra sweetness add additional maple syrup. Store in an airtight container in the fridge for up to 2weeks.
