🌱 It’s mid-week & sometimes all you need is a simple but delicious & comforting bowl of gnocchi with a tomato, garlic & basil sauce. Don’t be alarmed with the amount of garlic, it’s not a typo😉…trust me, this is a large batch so it’s deffo essential❤️!

• Plant based, vegan, oil free, dairy free, soy free, egg free, refined sugar free.

✖️ Tomato, Garlic & Basil Sauce ~ serves 8 {or 4 people for 2 days}
1 large onion, diced
3 stalks celery, diced
10 cloves garlic, minced
250ml vegan vegetable stock
140g tomato paste
3 x 390g crushed tomatoes @anglamark_norge
5 tomatoes, roughly chopped
1 tbsp maple syrup
2 large handfuls basil, chopped

1️⃣ Cook your gnocchi or chosen pasta according to directions {the amount will depend on how many people you are serving}.
2️⃣ In a large heavy based saucepan add the onion, celery & garlic. Add the stock gradually to prevent sticking sautéing for roughly 5 minutes, stirring constantly. Add the remaining ingredients & bring to a boil then reduce heat & simmer partially covered for about 50 minutes, stirring occasionally. Top with fresh basil & cashew parmesan.
