Annonse 🌱 Open sandwich or a two-handed double decker, it’s your choice! This is kind of your typical Aussie cafe style BLAT {Go’Vegan bacon, lettuce, avo & tomato} but with some added extras…my oil free spinach, basil & kale pesto plus red onion & alfalfa serve on toasted sour dough. So good, so filling but just a little tricky to eat😉! Thanks to @go_vegan_nordic for expanding their product selection so that {in our case today} we could bring a little of the missed😢 Melb cafe scene into our Norwegian home.

✖️ Oil-Free Spinach, Basil & Kale Pesto ~ 2 cups tightly packed spinach, 2 cups tightly packed basil, 1 cup chopped kale, 1 1/4 cups pine nuts, 4 tsp minced garlic, juice of 1-1 1/2 lemons, 1/4 cup nutritional yeast flakes, 1/4 cup water, 1/4 tsp salt.
– Add the greens to a high-speed food processor, blitz until finely chopped. Add the rest of the ingredients & blend until well combined & your mixture resembles pesto. Occasionally stop to scrape down the sides of the food processor.
