Annonse 🌱 On Saturday my husband & I celebrated our 10 year wedding anniversary❤️. My responsibility was to prepare a yummy brunch, to save time on planning I decided to go with a tried & tested family favourite…vegan oat pancakes with mixed berries, walnuts, maple almond butter, crushed freeze-dried raspberries & I topped it off with the new Go’Vegan creamy chocolate gelato by @go_vegan_nordic 😋Such a yummy, special treat, perfect for our celebration & the kids were especially excited about the ice-cream🤩!

✖️ Vegan Oat Pancakes ~
3/4 cup unsweetened almond milk
1/2 tbsp apple cider vinegar
1 1/2 cups oat flour
2 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp Ceylon cinnamon
1 overripe banana, mashed
1 tbsp maple syrup
1 1/2 tsp vanilla extract

– Add the apple cider vinegar to the almond milk & set aside. Combine the remaining ingredients in a bowl. Now add the milk/vinegar & whisk until well combined. Allow to rest for 10 minutes to thicken.
Use a pancake maker or a non-stick frying pan. Ladle desired amount of batter onto a preheated pan. Cook until bubbles start to form, usually a few minutes. Carefully flip & cook for further few minutes. Serve & top with your faves.
