Annonse 🌱 Lucky for us the weather is looking good over the next few days so today we did some meal prepping for a sweet little spring picnic. We’re looking forward to spending tomorrow afternoon in the sun☀️ at the park & this is what’s going into our picnic basket. Such a yummy, fresh combo of summer berries, walnuts & blueberry muffins which we’ve made a yummy vegan lemon cream cheese frosting for using the versatile Go’Vegan cream cheese from @go_vegan_nordic 💛. It’s definitely a combo we’re looking forward to sharing.

✖️ Vegan Lemon Cream Cheese Frosting ~
1/3 cup plant based margarine
1 tub Go’Vegan Cream Cheese {150g}
1 tsp vanilla extract
1 tsp lemon juice
Zest 1/2 lemon
3 cups powdered sugar

Using an electric hand mixer, beat the butter until fluffy. Add the cream cheese, vanilla extract, lemon juice & zest. Continue to beat for about a minute. Add the powdered sugar, 1 cup at a time & beat until thick.
